Established in 1969, Taltarni Vineyards is one of the pioneering wineries of Victoria’s Pyrenees wine region. Owner John Goelet, a direct descendant of the Guestier wine merchant family of Bordeaux, discovered and purchased Taltarni Vineyard after conducting a worldwide search for a site comparable to the great vineyards of Bordeaux.

Initial plantings were of Bordeaux varieties, including Cabernet Sauvignon, Cabernet Franc and Merlot. Shortly thereafter, Taltarni extended its plantings to encompass Sauvignon Blanc, Chardonnay, Shiraz as well as Pinot Noir and Pinot Meunier, enabling us to now showcase a diverse portfolio of sparkling, red and white wines.

Style: This Sparkling Shiraz has depth, elegance, and structure of our Pyrenees terroir with the vivacious sparkle unique to this fantastic style of wine.

Tasting Notes: Rich, dark fruit, and chocolate aromas combine with a vibrant blackcurrant palate, complemented with spicy notes of aniseed and pepper. On the palate, the sweetness has married perfectly with silky tannins from the Pyrenees to produce a long, velvety, cedary-oak texture.

Winemaking: Picked in the cooler night air from our estate vineyard and fermented in small open‐top fermenters, the wine was kept on skins for 5 days with hand‐plunging and pump‐overs until it was gently pressed. The wine was then aged in French oak barriques for 10 months before being prepared for tirage in accordance with the traditional method. After approximately 14 months on lees to further develop the wine and add to the creamy palate, the wine was disgorged, and a fruitful dosage liqueur was added.
